The crosses are made from the annual prunings of the ancient olive trees grown in Bethlehem.  The olive tree is a protected species in the Bethlehem region and cannot be cut down, but the annual prunings are gathered and stored for a few years before being sold as Holy Land Olive Wood. Only then is it hard enough for carving , developing the distinctive dark lines that make olive wood so desirable.
